Braised Lamb Shanks
serves:2
Ingredients
2 shanks per person
1 brown onion - diced  
2 cloves of garlic - diced 
1 carrot -diced  
1 stalk of celery - diced  
olive oil
1/2 cup red wine
can of peeled roma NAS Tomatoes
1/2 cup water  
 
Season with:
1 bay leaf
a pinch of rosemary and thyme,
half a chilli
zest of lime, lemon or orange (optional)
 
Method:
Sear and seal the lamb shanks in olive oil on high heat for a couple of minutes on each side then remove from the pan. Deglaze the pan with the red wine then add all other ingredients except for the seasonings. Simmer for 10 minutes then add the seasonings and the lamb shanks. Ensure that the shanks are covered with the sauce and continue to cook for 2 1/2 to 3 hours turning the shanks every half an hour.
 
Serving suggestion:
serve on a bed of sweet potato mash
 
To make the mash:
Add a dob of NAS Butter to the potatoes, a clove of finely diced garlic and some parsley.  
Mash it and just before serving smooth in 1/2 cup of cream or light plain yogurt.


* 1/3 cup flour
* ¼ cup olive oil
* 3 large leeks washed and sliced into thick pieces
* 2 cloves crushed garlic
* 2 cups white wine
* 1kg sweet potato cut into large pieces
* 1 cup chicken stock
* zest of 1 lemon
* 2 tbsp of Dijon mustard
* Pepper
* 1 tbsp of chopped sage
